One size, one price, four ways to order it

The board lists French fries and nothing else in the side column. The order is $2.30 and 360 calories, and asking for a larger portion is not an option because a larger portion does not exist. What does exist is a set of cooking instructions the crew applies at no charge, and those change the food more than most people expect.

Well done keeps the basket in the oil past the standard timer and produces a darker, crisper, drier fry. Light well pulls the basket early for a pale, soft result. Both cost $2.30 and both carry the same 360 calories, since the only variable is time in oil rather than any added ingredient. The two paid variations are cheese fries at roughly $3.30 and Animal Style fries at roughly $4.60.

Why the texture divides people

A frozen supermarket or drive thru fry is blanched, coated in a thin starch or dextrin layer and par fried before it is frozen. That coating is what holds a crisp shell for 10 to 15 minutes after it leaves the fryer. In-N-Out skips every step of that. A potato is cut, rinsed and fried once, so there is no shell to hold and the fry softens within a few minutes of hitting the tray.

The trade is a cleaner potato flavor and a far lower sodium figure.
